Worlds Best Pumpkin Bread!




Seriously, you need to try this!

A few years back I posted this pumpkin bread recipe.  It is pretty good but I was always turned off by the amount of oil and sugar it requires.  Then, I came across this lighter delicious option!  No need to warm this bread before eating - it tastes AMAZING when it is cold!

Ingredients:

  • 1 cup canola oil (or coconut oil warmed to a liquid form)
  • 2 cups granulated sugar
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups solid pack pumpkin
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • 2 teaspoons cinnamon
  • 1 teaspoon pumpkin pie spice
Instructions:
  1. In a medium size bowl, mix together the oil, sugar, eggs, vanilla and pumpkin.  Set aside.
  2. In a separate bowl, mix together the remaining ingredients:  flour, salt, baking soda, baking powder, cinnamon, and pumpkin spice.
  3. Add the two mixtures together and mix until combined.  Do not over mix.  
  4. Grease and flour two 9x5 loaf pans.  Divide the batter between the two pans.
  5. Bake at 325 degrees for 45-50 minutes or until a toothpick in the center of the loaf comes out clean.
