Sauteed Corn & Snow Peas

I love the taste that ginger and fresh lime add to this side dish!


Ingredients:

1 (16 oz) package frozen corn
2 tablespoons unsalted butter
2 tablespoons fresh ginger (reduce if powdered ginger)
1/4 cup red onion, chopped
8 ounces snow peas, trimmed and cut diagonal in to 1/2 inch pieces (about 3 cups)
1 tablespoon lime juice or 1 fresh lime
Salt and pepper to taste

Directions:

Melt butter in medium sauce pan.  Add ginger and onion, cook until almost soft (2-3 minutes).  Add corn and snow peas and cook until just tender, stirring often (5-6 minutes).  Stir in lime juice (or squeeze fresh lime on at time of serving).  Season to taste with salt and pepper.  Serve.
